Sauted sprouted moong


For this recipe you need:
1)sprouted moong-2 cups
2)Capsicum-finely chopped -1
3)Green chilly -finely chopped -1/2
4)Salt and black pepper powder-acc to taste. (Can add red chilly powder too)
5)Lime juice-1/2 tsp
6)Mustard seeds -1 tsp
7)2 tsp oil
Method:
1)Heat 2 tsp oil in a pan and add mustard seeds.After they splutter, add capsicum and green chilly and saute for 30 sec.
2)Add moong, salt ,red chilly powder and saute for 2/3 min
3)Add black pepper powder and lime juice and saute for 10/15 sec.
Variation:Can add coloured bell peppers (while you saute) or /and chopped tomato (while serving)

Khasta Kachori (Moong Daal)


Ingredients:
For the covering--
1)100g maida
2)1 tsp rava
3)1 tsp lime juice
4)1 1/2 tbsp hot oil
5)1/2 tsp salt
6)4 tbsp warm water
Method:
1)Mix all the ingredients from 1) to 4) . Rub in the hot oil so that crumbs of maida are formed.
2)Add the warm water and make a dough which is not too loose nor too stiff.
note:If the dough is too stiff then you will have a problem sealing the kachori and it will open up during frying.
3)Keep aside for half an hour
Ingredients for filling :
1) 1 cup moong daal soaked in hot water for 1/2 an hour
2)ginger-green chilly paste - 1tbsp
3)Ajwain-1/2 tsp
4)Jeera-1 tsp
5)Saunf-1 1/2 tbsp
6)Heeng-1/4tsp
7)Red chilly powder-acc to taste
8)Dhaniya(coriander) powder-1 1/2 tbsp
9)Jeera powder-1tsp
10)Garam masala powder-2 tsp
11)Sugar-1/2tsp
salt to taste
oil for frying
Method:
1)Pressure cook the soaked daal for 3/4 minutes or till 1 whistle.
2)In a pan heat 1 1/2 tbsp oil. Add jeera,saunf,ajwain and ginger-green chilly paste.
3)Add all the powders ,and thehn moong daal ,salt and saute for 5 min.
4)Let mixture cool for a few min and then grind 3/4 of mixture to coarse powder.
5)Make small poories of dough and fill in the moong daal and seal properly.
6)Fry kachori in warm oil (Oil should not be too hot)
Imp note: Deep fry kachori in a thick aluminium kadhai on the smaller burner of stove and fry on lowest heat setting.Put the kachori in oil and then turn on your gas.If during the process oil gets too warm you may turn it off for a few minutes and turn on again.(Frying may take 20-25 min )

Leftover/Stale roti snack

Ingredients:
1) Rotis -shredded/cut into reallysmall pieces.
2)Mustard seeds-1/2 tsp
3)Chopped medium size onion-1
4)Turmeric and red chilly powder -1/2 tsp each
5)sugar-1/2 tsp
6)lime juice-1 tsp
7)Chopped coriander and salt
oil for cooking
Method:
1)Heat oil in a pan add mustard seed and after they splutter add turmeric and red chilly pwd.
2)Add onion and saute for 1or 2 min
3)Add green chilly.Add roti and saute for a while
4)Add salt,sugar and lime juice .Add coriander.cover and cook for 2 min

Quick puffed rice snack

Ingredients:
1)Bowl of murmura(Puffed rice).
2)finely chopped onion-1
3)Finely chopped cucumber-2 tbsp (optional)
4)finely chopped green chilly-1
5)Finely chopped coriander
6)Finely chopped kairi(green mango)-1tbsp (optional)
7)Red chilly powder,salt to taste
8)1 tbsp grounnut/peanut oil
Method:
1)Mix all ingredients in a bowl and serve immediately a moisture in onions and cucumber will make murmura soggy after a while.

Kuttu(Buckwheat) pakora

Ingredients:
1)Kuttu atta(Buckwheat flour)-1/2 cup
2)Mashed boiled potato-1/2 cup
3)Ginger, green chilly paste-2 tsp
4)salt
5)Red chilly powder
Method:
1)Mix potatoes ,flour and paste and salt to make dough. Add more flour if it isnt stiff enough.
2)Make into small cigar/flattened balls shape
3)Deep fry in medium hot oil

Quick and tasty Capsicum subzi

Ingredients:
1)Capsicum chopped into medium size bits
2)Mustard seeds-1/2 tsp
3)Red chilly powder.
4)Besan(gram flour) 3tbsp
5)2 tbsp oil
6)Roasted cumin(jeera) powder
Method:
1)Heat oil in a pan and add mustard seeds.Let them splutter
2)Add red chilly powder and then add the capsicum.
3)cover and cook for 5 min or till capsicum is a little soft .
4)Add besan and saute for a min or till besan turns a little golden brown.
5)Add salt and jeera powder.

Quick and tasty turnip(shalgam) subzi

Ingredients:
1)Turnip -1 no (Cut it into foor quadrants and slice each quadrant) slices to resemble half moon
2)jeera-1tsp (Can use ajwain instead of jeera too)
3)Green chilly-chopped -1no
4)Tomatoes chopped lenghwise-2 medium size
5)salt,oil for cooking
6)Red chilly powder-3/4 tsp
coriander for garnishing
Method:
1)Heat oil in pan and add jeera/ajwain and let it splutter
2)Add red chilly powder and then add tomatoes and green chilly and stir fry for 2 min
3)Add the turnip ,cover and cook for 4/5 min
4)Add salt .
garnish with coriander

Paneer in Yellow Gravy

Ingredients:
1)Paneer cubes-1cup
2)Dry ginger(Saunth) powder-1tsp
3)Green and Black cardamoms-2 each (Outer skin removed and powdered)
4)Saunf coarsely powdered-1/2 tsp
5)Turmeric-1/2tsp
6)Garam masala-1tap
7)Black pepper powder-1/2tsp
8)Tejpatta(batleaf)-2
9)Milk-1/2cup
10)Fresh cream-1/2cup
11)Cashew paste -2tbsp (optional)
Method:
1)Deep fry paneer cubes and put them in a pan of 3cups boiling water
2)Add all of masalas to above and simmer for few min
3)Add milk and simmer.Then add cashew paste and then cream and cook for few min.
4)Pour 1tbsp of hot oil in above and cook till gravy thickens.

Arbi in gravy

Ingredients:
1)Arbi (colocasia) peeled,chopped and washed.
2)Turmeric powder-1/2 tsp
2)Black pepper powder-1tsp
3)Dhaniya powder-2 tsp
4)Ajwain- 1tsp
5)Heeng-1/4 tsp
6)5 cloves,5black cardamoms,2 red chillies,3 bayleaves
7)amchoor powder-1/2tsp
8)Curd-1 cup (leave out amchoor if curd is sour)
salt to taste and oil for cooking

Method:
1)Deep fry arbi till golden brown.
2)Heat oil in a pan (about 1 1/2 tbsp).
3)Add ajwain and bayleaves and let the seeds splutter.
4)Add the other spices and powders and fry for 10 sec
5)Add a cup of water and simmer till water boils.
6)Add curd tablespoon at a time and keep stirring .
7)Add fried arbi and salt. Cook till done

Tasty shredded potato upma(Batatyacha Kees)

Ingredients:

1) Potatoes peeled and shredded/grated - 3 cups

2) Roasted groundnuts(peanuts) made into coarse powder-2cups

3)Ghee-2 to 3 tbsp

4)Green chilly chopped-1

5)salt to taste

6)Sugar-1/2 tsp

7)Lime juice-1 /2 tsp

8)Red chilly powder-1 tsp

9)Jeera-1tsp

Method:

1)Heat ghee in a pan and all jeera and green chillies.

2)When it splutters add potatoes and saute till they turn a little translucent.

3)add peanut powder,salt,sugar,red chilly powder .Cover and cook for 4/ 5min

Paneer in brown gravy

Ingredients:
1)2 onions chopped lengthwise and deep fried till golden brown.Grind to paste adding some water.
2)ginger garlic paste-2tsp
3)7/8 cashewnuts made into paste adding little water
4)garam masala-1tsp
5)jeera and dhaniya powder - 1tsp each
6)kasuri methi
7)salt and red chilly powder to taste
8)Paneer cubes -1/2 cup
9)Chopped veggies of your choice -capsicum,red bell peppers,onion etc
10)Jeera and chopped green chilly.
Method:
1)Heat oil add 1/2 tsp jeera and green chilly.
2)Add ginger garlic paste, garam masala all the veggies and stir.
3)Add cashew paste,kasuri methi,jeera-dhaniya powders,red chilly powder and salt.
4)Add paste of fried onions and add little water and cook for 2/3 min
5)Add paneer and cook for few min till done.

Paneer in red gravy..tasty and easy

Ingredients:
1)Cashew nuts -1/3 cup
2)Melon seeds(magaj)-1/3 cup (optional)
3)Ginger-garlic paste- 2 tsp
4)Tomatoes pureed -3 no
5)Kasuri methi crushed(do not skip)-1 1/2 tsp
6)Bay leaves-3
7)turmeric -1/2 tsp
8)sugar-1/2 tsp
9)Paneer cubes- 1/2 cup
salt to taste
Method:
1)Boil cashew nuts and melon seeds for 5 min and grind into paste adding water.
2)Heat oil in a pan and add bay leasves and then ginger garlic paste.
3)Add turmeric,red chilly powder,cashew paste,tomato puree and simmer for 3/4 min
4)Add paneer, kasuri methi ,salt and sugar.Cook till paneer is done.

Paneer and peas in Goan style gravy

Ingredients:
1)250 g Paneer cubes
2)Boiled peas-1 cup
3) 6 medium size tomatoes pureed
4)2 onions
5)Garlic -6/7 cloves
6)3 sticks cinnamon, 2 tsp khus-khus, 3cloves, 4 peppercorns, 2 tsp sabut dhaniya, 2 dry red chillies
7)salt to taste ; sugar -1/2 tsp
8)garam masala
9)grated dry coconut(copra) 1/2 cup

Method:
1)Fry cinnamon,khuskhus,cloves,peppercorns,dhaniya,red chillies in 2 tsp oil.
2)Roast the 2 onions directly on flame of stove (with skins on) till they become black.
3)Remove skins once they cool.
4)Fry grated coconut in 1 tsp oil.
5)Grind all fried spices, coconut, garlic and onions into a paste adding some water.
6)In a pan heat oil and add above paste, tomato puree, 1/2 tsp sugar and cook for 7/8 min.
7)Add the paneer,garam masala ,salt and peas and cook for 6/7 min.

Tasty and quick Paneer Subzi

Ingredients:
1)Capsicum -chopped (cut cross sections) -1 no
2)Medium size onion chopped in slices (cut cross sections)-1 no
3)Mediam size tomato chopped-1 no
4)Ginger garlic paste-1 tbsp
5)Paneer cubes-1/2 cup (It should be soft)
6)Salt,red chilly powder to taste
oil for cooking -1 to 2 tbsp
Method:
1)Heat oil in a pan and add ginger garlic paste.Fry till golden
2)Add onion first and stir fry for 30 sec on medium heat
3)Add capsicum and stir for for another minute
4)Add tomatoes, paneer cubes and saute for 2 min
5)Add salt ,red chilly powder .
6)Cover and cook for 5/6 min

Raagi (Finger Millet) Roti

Ingredients:
1)Raagi flour- 1 cup
2)Medium sized onion finely chopped-1 no
3)Chopped green chilly-1
4)Fresh dill leaves chopped finely -3/4 cup ... Is very essential for this recipe
5)Chopped fresh coriander-1tbsp
6)Fresh grated coconut or coconut cream/coconut milk-2 tbsp (optional)
7)jeera(cumin) powder-1 tsp
8)salt and red chilly powder to taste
9)oil for shallow frying /roasting
warm water-1/2 cup

Method:
1)Mix all the ingredients.
2)Knead adding water as you mix.It should be a soft pliable dough ...not too hard
3)Take a flat steel plate and grease it with oil.
4)Take a golf ball size amount of dough and pat it (flatten it )on the plate( 3-4mm thick)
5)grease the pan with oil and place the plate (with dough side down) on the pan.
6)Remove the roti from the plate once this side is done.
7)Cook the other side of the roti after smearing it with oil.

Amazingly Tasty Potato Subzi

Ingredients:
1) 2 medium sized potatoes boiled ,peeled and chopped into really small dices
2) 3-4 tbsp ghee
3)ginger garlic paste-1tbsp
4)2 medium sized tomatoes finely chopped (tomatoes of desi variety will taste better)
5)jeera -1/4 tsp
6)heeng- pinch
7)coarsely powdered sanf - 1/2 tsp
8)turmeric and red chilly powder- to taste
9)chopped coriander
10)kasuri methi-1 tsp
11) cumin and coriander powders- 1 tsp each
Method:
1)Heat ghee and add jeera and heeng
2)Add saunf fry for 10 sec and then tomatoes and fry 2 min.
3)Add ginger -garlic paste,turmeric and red chilly powders. Fry till tomatoes are cooked and ghee separates
4)Add potatoes, cumin-coriander powders,kasuri methi, chopped coriander,salt.
5)Add 1/2 cup water and mash a few potato dices. Cook for 2-3 min .

Whole wheat pav


Ingredients:
1) 3 cups whole wheat flour
2)1/2 cup refined flour (maida)
3)1/4 cup honey
4)1 cup warm water 110 degree F
5)1-1/4 tsp salt
6)1/4 cup vegetable oil
7)8 grams=2-1/4 tsp dry yeast
8)1/2 tsp sugar
9)1/3 cup milk
Method:
1)Activation of yeast is the most imp step. Take 2tbsp water (from 1cup meant for recipe) and add 1/2 tsp sugar .Microwave exactly 10 sec. Immediately add 1/2 tsp yeast. Keep this mix aside for 5 min.If bubbles appear then it is good (yeast is active)to use, else throw it away and repeat the process.Temp of water should be around 110 degree F.
2)Mix remaining water and yeast , to this add honey ,oil, milk and salt.
3)Mix bubbling yeast mix with above mix.
4)Add flour slowly to this liquid mixture.
5)keep kneading for 10 min
6)cover and let it stay for 1 hour
7)make small balls and flatten them a little. Let these rise for 1 hour
8)Bake the pavs at 350 degree F or 180 deg C for 25 min or till done

Fruits with custard


Fruit with spicy citrus sauce

Ingredients:
1)Chopped fruits of your choice
2)Sugar-1/2 cup
3)Whole spices -cinnamon,stare anise and cloves
4)lime juice-1/2 tsp
Method:
1)Boil sugar with 1 cup water and all the spices till it reduces to half
2)Add lime juice.
3)Pour over and around the fruits

Raw banana pakora

Ingredients:
1)Raw banana peeled-1no
2)Gram flour(besan)-1 cup
3)Baking soda-1/2 tsp
4)Salt and red chilly powder to taste
Method:
1)Add soda, salt and red chilly powder to gram flour and then add water to make medium to thick batter(It should'nt be runny)
2)Make lenghtwise slices of banana
3)Dip in batter to coat thoroughly
4)Deep fry till golden

Raw Banana Cutlet

Ingredients:
1)Raw banana boiled in cooker with skin on-2no
2) Medium size potatoes-boiled-2 no
3)1 chopped green chilly
4)2 tsp ginger -garlic paste
5)1 medium onion chopped finely
6)Dry mango (amchoor) powder-1/2 tsp else lime juice -1/2 tsp
7)Garam masala powder-1/4 tsp
8)Red chilly powder to taste
9)Arrowroot powder/corn starch -2 tsp
salt to taste
oil for shallow frying
Method:
1)Mash the bananas after peeling ,mash the potatoes and mix with all above ingredients.
2)If mix is too sticky add more corn starch
3)Make into any flat shape.
4)shallow fry in oil till golden brown

Cucumber thalipeeth


Ingredients:
1) Grated cucumer (medium to large)-1 no
2) Wholewheat flour (atta)-2 heaped tbsp
3) Carom seeds (ajwain)-1/2 tsp
4) Chopped fresh coriander-1 tbsp
5) Chopped green chilly-1
6)Turmeric powder-1/2 tsp
7) Red chilly powder-1/2 tsp
8) Oil-1tsp
9) lime juice-1tsp
10) salt to taste
Method:
1)Mix all the above ingredients.
2) spread a little oil on a non-stick pan
3)On this non- stick pan spread(gas not turned on) the above batter with a ladle. The batter should be a 1/2 cm thick layer.
4)turn on the heat and let it cook for 7-8 min on medium heat. Pour little oil on the sides while it cooks
5)Turn it over and cook the other side till golden brown
