Khasta Kachori (Moong Daal)


Ingredients:
For the covering--
1)100g maida
2)1 tsp rava
3)1 tsp lime juice
4)1 1/2 tbsp hot oil
5)1/2 tsp salt
6)4 tbsp warm water
Method:
1)Mix all the ingredients from 1) to 4) . Rub in the hot oil so that crumbs of maida are formed.
2)Add the warm water and make a dough which is not too loose nor too stiff.
note:If the dough is too stiff then you will have a problem sealing the kachori and it will open up during frying.
3)Keep aside for half an hour
Ingredients for filling :
1) 1 cup moong daal soaked in hot water for 1/2 an hour
2)ginger-green chilly paste - 1tbsp
3)Ajwain-1/2 tsp
4)Jeera-1 tsp
5)Saunf-1 1/2 tbsp
6)Heeng-1/4tsp
7)Red chilly powder-acc to taste
8)Dhaniya(coriander) powder-1 1/2 tbsp
9)Jeera powder-1tsp
10)Garam masala powder-2 tsp
11)Sugar-1/2tsp
salt to taste
oil for frying
Method:
1)Pressure cook the soaked daal for 3/4 minutes or till 1 whistle.
2)In a pan heat 1 1/2 tbsp oil. Add jeera,saunf,ajwain and ginger-green chilly paste.
3)Add all the powders ,and thehn moong daal ,salt and saute for 5 min.
4)Let mixture cool for a few min and then grind 3/4 of mixture to coarse powder.
5)Make small poories of dough and fill in the moong daal and seal properly.
6)Fry kachori in warm oil (Oil should not be too hot)
Imp note: Deep fry kachori in a thick aluminium kadhai on the smaller burner of stove and fry on lowest heat setting.Put the kachori in oil and then turn on your gas.If during the process oil gets too warm you may turn it off for a few minutes and turn on again.(Frying may take 20-25 min )
